MANILA – History is told not only through textbooks and museum displays, but also through food, according to the owner of the 78-year-old Kamuning Bakery.
The unassuming bakery cafe in Quezon City continues to host politicians and business leaders in regular “pan de sal” forums like it did in the past.
“I believe history should be preserved in the way we eat, the way we cook, the way we bake. It’s very much part of Philippine history,” Flores said in an exclusive interview with ANC’s The Boss.
The bakery makes pan de sal in “pugon” or wood-fired ovens, giving the Filipino breakfast and snack staple a unique smoky flavor.
“In the last few years, foreign-branded bakeries have been fashionable all over Asia, not only in the Philippines… I think it’s about time Philippines (should) also be proud of our own bread and make it world class,” Flores said.
Flores, who turned the bakery around from a money-losing venture, likens being a boss to parenthood.
“A boss is like a father. You can be very strict, you can be a disciplinarian. But you have to be caring. Parang you take care of employees like they’re your children. It’s not about the age,” says Flores.
“I think when you say ‘family business’, you don’t mean only members of the family owning that business or helping that. I think family business should mean also all the employees parang feeling part of the family. They should feel and you should also have this obligation na it’s not only the salary, you have to make them better persons also,” he added.
