DAHLINGS, good food is central to the DNA of every Ilonggo’s taste bud; and good food we enjoyed in the recent grand launch of the legendary Ang Kamalig Restaurant-Atria and its new Ilonggo Family Fiesta Favorites.

“Good food is meant to be shared especially with your loved ones; family and food are the two things important to Ilonggos, and today is a celebration of that,” said Chef Miguel Treñas, chief executive chef of Ang Kamalig Restaurant.

Kamalig guests were treated to a fiesta buffet of Ilonggo Grilled Favorites and Ilonggo Heritage Food that were conceptualized by Chef Miguel and his team.

The Ilonggo Grilled Favorites included sumptuous baked oysters, grilled fish in banana leaves, and Batwan Roast Chicken, a simple fare found only in our own province. On the other hand, the Ilonggo Heritage Food included Ilonggo favorites Callos and Lengua plus Kinilaw na Taningue, Pancit Molo, Fish Head Soup in Miso, Aligue Pancit Palabok or Gambas in Aligue Sauce.

Chef Miguel incorporated unique local ingredients such as batwan and ginger to fresh catch of seafood and shellfish to make these Ilonggo family favorites.

It is the right time to launch the Ilonggo Family Fiesta Favorites now that more and more Ilonggos are looking for good places where they can dine and enjoy good food with their families. The merry month of May is also the “fiesta season” so Kamalig made the selection available to families who may be looking for them.

Chef Miguel also started last May 19 the Junior Ilonggo Chef School to 10 students. Children age 10-15 are welcome to register at P3,000; this covers three sessions on Ilonggo favorite appetizers, main meals, and desserts. Chef Miguel teaches every Friday from 2pm to 4pm. For sure kids will look forward to eating and learning at the same time. Ilonggo food is so unique that Chef Miguel wants to continue the tradition by teaching the basics to the kids.

Ang Kamalig Restaurant has two branches in Iloilo City – Atria and Robinson’s Place Jaro. Ang Kamalig accepts to take away orders and caters to special occasions.
